Ingredients
Prepare White Sauce:
- 2 tbs Makhan (Butter)
- 2 tbs Maida (All-purpose flour)
- 1 Ciup Doodh (Milk)for thick sauce
- 1.5 Ciup Doodh (Milk)for thin sauce
- 0.25 Namak (Salt)or to taste
- 0.5 tps Lal mirch (Red chili) crushedoptional
- 0.25 tsp Kali mirch (Black pepper) crushed
- 1-2 tbs Hara dhania (Fresh coriander) chopped
- 0.5 tsp Chicken powder
Prepare Tawa Malai Boti:
- 0.5 Cup Dahi (Yogurt)
- 3 tbs Fresh cream
- 1 tsp Hari mirch (Green chilli) paste
- 1 tbs Adrak lehsan paste (Ginger garlic paste)
- 1 tsp Mustard powder
- 1 tsp Zeera powder (Cumin powder)
- 1 tsp Namak (Salt)or to taste
- 0.5 tsp Garam masala powder
- 1 tsp Lal mirch powder (Red chili powder)or to taste
- 0.5 tsp Kali mirch powder (Black pepper powder)
- 0.5 kg Chicken boneless cubes
- 1-2 tsp cooking oil
- for smoke Koyla (Charcoal)
- Mozzarella cheese grated as required
- Hara dhania (Fresh coriander) chopped
- Lal mirch (Red chili) crushed
- Cooking oil for frying
- Mozzarella cheese gratedas required

Directions
Prepare White Sauce: -In saucepan,add butter and let it melt. -Add all-purpose flour and mix well. -Add milk,salt,red chili crushed,black pepper crushed,fresh coriander,chicken powder,mix well and cook until sauce thickens & side aside. Prepare Tawa Malai Boti: -In bowl,add yogurt,cream,green chili paste,ginger garlic paste,mustard powder,cumin powder,salt, garam masala powder,red chili powder,black pepper powder and whisk well. -Add chicken boneless cubes,mix well and marinate for 30 minutes. -Thread chicken boneless cubes into skewers. Method 1:Tawa Malai Boti -On gridldle,add cooking oil and fry skewers from all sides until done (cover in between). -Give a charcoal smoke for 2 minutes. -Drizzle white sauce over fried chicken skewers,add mozzarella cheese,fresh coriander and red chili crushed,cover and cook until cheese melts (approx. 2-3 minutes). Method 2:Sizzling Malai Boti -In frying pan,add cooking oil and fry chicken cubes from all sides until done (cover in between). -Give a charcoal smoke for 2 minutes. -Add mozzarella cheese,cover and cook until cheese melts (approx. 2 minutes). -Add white sauce,fresh coriander and red chili crushed & serve!
